We have many years of experience of teaching and making the finest charcuterie from local traditional breeds of animals that have led a free range life, having trained in Germany and rural France, we have now brought our skills to the UK.
It is easy to see that livestock which has led a good life will reward its keeper with goodness, it will tell it's own story by providing a meal which last's in your memory.
From this basis we work with the meat with respect, we only make a product which offers a certain quality and in doing so we insist that the livestock used must have had a good life.
We are fortunate here in the UK that we are able to choose the animals from within and around the country's moorlands, uplands and lowlands, so guaranteeing a source which is unique not just in breed but also in flavour.
It is our aim to help save our countrys food heritage by using traditional and rare breed animals.
By including the traditional breeds of livestock we are ensuring a brighter future for our countrys farmers!
